I rebooted my laptop today after running an update (sudo pacman -Syu) and the only options left on the Grub bootloader are Reboot, Shutdown and Memory Test. I would have thought it was just the computer or something I did, but my desktop did the exact same thing, bot running ArcoLinux.

You do realize this is not much to go on.
Watch the videos about arch-chroot or chroot.
https://www.youtube.com/@ErikDubois/search?query=chroot
Read the arcticles about same words on our websites.
As you can fix any computer with knowledge.
I would reinstall grub, reinstall the kernel,
and type in the terminal
when on EFI then type
and
and never never dualboot

NOTHING wrong with dual booting. It's not the issue.
