I keep a note for me, for the future: after I'll have positively completed the test above, the next step will be to make custom files and folders (included in the custom ISO) automatically available also in the homes of the new users after installation (I've already seen that archiso + releng allows it for the live user in the live environment after boot, but I didn't tested if they will be preserved in the final installation too).
Anyway, all the questions of this topic have been answered (I now try to mark it as solved); maybe I'll open another one, with more specific matters, in the future.
