I'm trying to build an xfce iso and I keep getting this error.....
How do I fix this?

This line is not the error.
A few lines back there is an error. The iso does not get build and the copy line can not copy anything.
So build it again and look higher up in the output.
Did you install the new arcolinux-mirror-git package and change pacman.conf!?

I just followed the directions from the BYOI site and didn't say anything about installing the new arcolinux-mirror-git package and change pacman.conf!
Where and how do I go about getting these packages?

So I'm running Manjaro at the moment so link and video you suggested to follow won't work for me.
I ran the build script again and this I think this is the error....

Building an ArcoLinuxB iso on manjaro won't work. Because manjaro doesn't have the archiso package (which is needed to build the iso) in their repos. Plus the arcolinux repos would have to be installed as well.
you need to build it from any arcolinux or archlinux installation. If you pick archlinux, you have to install the arcolinux repos and keyring. If you chose arcolinux it will work out of the box.

Ok....so basically I need to install default iso of arcolinux or archlinux and then build from there.

You can not build the iso on Manjaro.
Install any ArcoLInux and build your iso that way.
