The files I have in my project folder locally are not the last
So I replace them locally with the new ones , and then I ./git.sh in the terminal to commit
Is it possible to update github , in real time , at the moment the change is done in the original file ?

I think you better check out this tutorial.

git clone your github
and
stay working in that folder
then upload back with
./git.sh

I have the feeling you have two folders...

I'll take the exemple of i3 config file
The path is ~/.config/i3/config
but the path of i3 config file in the local github folder is ~/NUC-Archi3/config
So I have 2 config files for i3
Do you mean I should remove the first path and work in the local github folder
to make any change in my dot files ?

indeed you can copy/paste also the .git folder to ~/.config/i3 and work from there
I have done that for years
In this scenario you have just one folder
CTRL+H shows if you have a .git folder

or

keep the 'official folder' on ~/NUC-Archi3/ and git push that one
just copy paste the files and folders from ~/.config/i3 then to the above mentioned folder.
never the .git folder in that case.
